After an amazing trip to Bangkok, and feasting on some seriously tasty street food. I was inspired by a dish, which I ate for breakfast. This is my version of it, although not the exact recipe the vibrant flavour does comes pretty close.
Ingredients –
Serves 2
• 600g pork mince
• 1 small onion – finely chopped
• 250g green beans – cut into 3cm pieces
• 2 cloves garlic – minced
• Thumb size piece of ginger – grated
• 1 whole chilli – optional
• 1tbsp sunflower oil
• 3 Tbsp. oyster sauce
• 1 tsp. fish sauce
• ¼ cup chopped mint
• ¼ cup chopped coriander
• Juice of one lime
• 4 lime leaves – 2 whole and 2 finely chopped
• Rice of your choice
• 2 eggs
Recipe –
Cook rice
• Fry eggs and set aside
• Fry the onions in a little sunflower oil until translucent
• Add the chopped garlic, ginger and chilli
• Fry for 1 minute
• Add the pork mince and brown slightly while breaking it up
• Add green beans
• Add limes leave
• Add oyster sauce, fish sauce, lime juice
• Mix well
• Add fresh herbs and serve with rice and a sunny side up fried egg
• Top with extra coriander and serve with a wedge of lime on the side
Dees notes –
• You can use chicken mince if you prefer
• Don’t add salt, the oyster sauce is pretty salty
• Remember to chop the lime leaves as finely as possible as they can be a little tough
